This breakfast recipe is super-fast, easy, healthy, gluten-free, dairy-free, and delicious! I stumbled upon this recipe on the website livestrong.com – tried it – loved it – and it’s now a part of my regular breakfast rotation! It all mixes up in a blender, food processor, and even a personal sized smoothie blender works.
The single-serving makes about 5-6 3-inch pancakes, or 4-5 4-inch pancakes.
Avoid the breakfast sugar rush by staying away from syrups or anything with a lot of added sugar. Instead, some healthy delicious topping choices are nut butters, Greek yogurt and sliced fruit, applesauce (no added sugar kind), fruit compote (no added sugar).
Ingredients for 1 person: Ingredients for 2 people:
1 medium banana 2 medium bananas
2 eggs 4 eggs
1/3 cup whole oats 2/3 cup whole oats
1/2 tsp baking soda 1 tsp baking soda
Optional:
- Add a little cinnamon or pumpkin pie spice to boost flavor.
- 1 tsp of flax seeds for some extra omega-3 fatty acids and fiber.
Directions:
- Mix all ingredients in a food processor or blender.
- Spray coconut or avocado oil in a stainless steel or cast iron frying pan on medium heat. Pour a small amount of batter in pan to make 3-4 inch pancakes.
- After bubbles appear in the pancake, carefully flip and cook 20-30 seconds more or until golden brown.
- Add healthy toppings and enjoy!
